New snack

I have so many good intentions about being a great mom. Intention is the key word...it seems I rarely follow through. Yesterday was a rare day I guess. I decided to have a snack ready for the kids as they walked in the door. This strawberry snack was a huge hit. I thought I would share it for a fun summer snack. I also tried to make a healthy orange julius shake...did not go over well. IceCream is way better in an Orange Julius.



Ingredients:-1 lb large strawberries-

8 oz. cream cheese, softened (can use 1/3 less fat)

-3-4 tbsp powdered sugar (4 tbsp for a sweeter filling)-

1 tsp vanilla extract

-graham cracker crumbs


Directions:1. Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife, if necessary (some may already be hollow inside). Prep all strawberries and set aside.2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or ziploc with the corner snipped off. Fill strawberries with cheesecake mixture. Once strawberries are filled, dip the top in graham cracker crumbs. If not serving immediately, refrigerate until serving.

These look so good! Thanks for the idea! Ps you really look so good, if u dont mind and have time tell me sometime how you lost weight, any tips? I lost 40 lbs last year now gained 20 back, (rude) i have to get back on the wagon now :) i need motivation or inspiration or something! Thanks again,these look so yummy!

We finally made these Sat. Oh my gosh! They are soooo good! Thanks so much! And my kids love them and think I'm so cool for making them! Haha i seriously want them everyday-best thing ever!! Thanks
